Dulce de Leche Apple Crumb Pie Recipe
Here in Barcelona I get to have some wonderful things. Sky, sun, sea, wine (and more wine)… but pie? Pah. No pie. And as most of my friends are expats from the U.S. or the UK, well, they want them some pie, too. So I’ve made it my unofficial job to be pie girl. Now, wait… Pie Girl. That’s better. After all, I’m a sorta superhero, right?
So it was my job to bring a pie along to the last dinner party I went to. What’s better than using local ingredients, like thick and creamy dulce de leche? So here it is… Dulce de Leche Apple Oat Pie. It’s a wonderful pie– perfectly sweet with that perfect Granny Smith apple tang. The oat topping (yes, I’m way too lazy for two-crust pies) bakes up crisp and cinnamon-y and delicious. The dulce de leche caramel just makes the pie! Cant find any where you live? Use caramel ice cream topping instead– it works fine.
One of the (Spanish) guests at the dinner party called this pie bestial. They’re just not used to desserts like this. And they’re right… this pie is dangerous.
Dulce de Leche Apple Crumb Pie Recipe
Pie & Filling:
Pastry for single crust pie
1/2 c. sugar
3 tbsp. flour
1 1/2 tsp. cinnamon
pinch salt
6 c. peeled granny smith apples, sliced thin
Topping:
2/3 c. brown sugar
1/2 c. flour
1/2 c. quick-cooking (not instant) oats
1/2 c. cold butter
Garnish:
1/2 c. walnuts, chopped
1/3 c. dulce de leche
Instructions: Preheat oven to 375 degrees F.
Prepare pie crust as per your recipe. I’m a lazy baker and use an easy no-roll pie crust recipe.


Prepare crumb topping: With a fork, combine flour, brown sugar, and oats in a medium mixing bowl. Cut in butter (a pastry cutter works well, though I don’t have one so suffer with a fork) until oat mixture looks like coarse crumbs.
