Honey Ham, Havarti, and Leftover Carpaccio Sandwich
Ah, the sad lives of leftovers. They sit in your fridge, well-wrapped and well-intentioned, waiting for somebody to eat them. And though somebody always means to do the eating, oftentimes the poor leftover just gets… left. Uneaten, unloved and, unable to (as Phoebe from Friends would say) fulfill it’s food destiny. And though growing a nice toupee of blue mold is an impressive accomplishment, it’s not what the leftover was truly meant to do.
I truly feel for leftover food– I understand its plight. So when I made beef carpaccio and artichoke crostini for a dinner party the other night, I felt it was my civic duty to find a good use for the leftover carpaccio. Whimpering in my fridge as it was, anxious for somebody to help it fulfill it’s food destiny.
Apparently, its food destiny was as a Honey Ham, Havarti, and Carpaccio sandwich on pan de pages (artisan bread). It was a good destiny. An honorable one. Something Braveheart, for instance, would be proud of.

The lesson for today? Learn to honor your leftovers.
