Perfect Basil Pesto Recipe

There’s nothing in this world, I think, as delicious as pesto. The creamy, fruity olive oil. The pungent, sweet basil. The sharp garlic and salty, nutty Parmesan. It’s making me hungry just thinking about it.

Now, as a real pesto devotee, I think all pesto recipes are perfect. But I have to say that some recipes for pesto are more perfect than others. My favorites are thick and flavorful and have plenty of cheese and pine nuts. And as far as that goes, the recipe below is perfect. It’s the thickest, richest pesto I’ve ever tried, and when used as a sauce, clings to the enitre surface of a piece of pasta. It’s perfect.

However, if you like your pesto a little thinner, just add a touch more olive oil. :)

Thick and Flavorful Pesto Recipe

Ingredients:
4 C. packed fresh basil leaves
1/2 C. extra virgin olive oil
1/3 C. toasted pine nuts
3 cloves garlic
1/3 C. freshly grated grated parmesan cheese
1 tsp. salt
freshly ground black pepper, to taste

Instructions: 1. In a blender or food processor, blend the basil, oil, nuts, and garlic until they make a thick paste.

2. Dump in the parmesan cheese and the salt. Blend.

3. Scoop pesto out into a bowl and stir in pepper to taste.

4. Serve immediately or cover surface of pesto in a fine layer of olive oil and store in the fridge up to five days. Makes one cup.
