New Years Breakfast Recipe for Baked Eggs Benedict Cups
Happy New Year! If, as you should be, you’re waking up this morning with a sour stomach and a head full of ideas for the new year, you’re probably thinking about breakfast. Something greasy to cut the hangover… but something special enough to celebrate the fact that, well, it’s a new year.
This recipe is easy enough to make on an everyday Tuesday morning… but it’s special and tasty enough for any celebration. I love to make this for any special holiday– especially when I’ve overindulged the night before and don’t want to spend more than 5 minutes in the kitchen. While this doesn’t taste exactly like eggs Benedict, it does taste great. And, to meet my “New Years hangover” requirements, it cooks up in 5 minutes. Serve 6-12, depending on the eaters’ appetites.
Baked Eggs Benedict Cups Recipe
Ingredients:
12 eggs
12 slices of thinly sliced ham
12 small slices of emmental (or swiss) cheese
3/4 C. (or so) heavy cream
1/2 C. freshly grated Parmesan cheese, or to taste
salt and pepper, to taste
Toasted ciabatta bread (or English muffins), as needed
Chopped fresh chives, to garnish (optional)
Instructions: 1. Preheat the oven to 450 degrees F.
2. Spray bottom and sides of 12 muffin tins with cooking spray (or use olive oil).
3. Into each muffin tin, place a “nest” of ham using one slice for each tin.
4. Place a small piece of emmental cheese at the bottom of each “nest”.
5. Break one egg over. Sprinkle with salt and pepper to taste.
6. Pour about 1 tablespoon of heavy cream over.
7. Sprinkle with about 2 teaspoons grated Parmesan cheese (use more or less as desired).
8. Bake in preheated oven 10 to 12 minutes, until eggs reach desired level of doneness. For soft yolks, watch them carefully. They should still jiggle when removed from oven. Let rest 5 minutes before removing from muffin tins.
9. Sprinkle with chopped chives if you have them. I didn’t, which is why you don’t see them in the photo above.
10. Serve with small slices of toasted ciabatta bread (or toasted English muffins) and butter.
