Food from Heaven: How to Grill Oysters in the Shell
While food on the grill tastes wonderful slathered in lots of spices and tangy sauces, something about cooking something over an open flame brings out the best in simple foods, as well. And some foods really shine when prepared with simplicity.
When you grill oysters, they cook beautifully and naturally, and are full of flavor. And unlike with some other cooking methods, you don’t lose an ounce of flavor. You can serve grilled oysters any way you want. My favorite is to provide a variety of sauces for people to choose from. Some of my favorites are mignonette sauce, a shallot vinegar, a vinaigrette, Tabasco, fresh lemon juice, or even plain ol’ cocktail sauce.
If you’ve never tried to grill oysters before, you should certainly start! Here’s the simplest way to do it.
How to grill oysters:
1. Before grilling, be sure the top and bottom of your oyster shells are clean. Keep very cold until ready to cook.
2. Heat a gas grill to high, or use plenty of hot charcoal for a charcoal grill– when you grill oysters, you want your grill as hot as possible.
3. Place your whole, clean oysters on the rack of your grill.
4. Close the cover on your grill to keep in the heat.
5. When your oysters begin to open a bit, they’re ready to eat. Remove them immediately to avoid overcooking. If they overcook, they’ll be rubbery and disappointing, so watch them carefully! While they’re cooking, it’s best to check them every 2-3 minutes to see if any shells have opened.
6. Open your oyster shells with care to ensure that you don’t lose any of the delicious juices.
7. Serve on the shell with choice of sauces and/or lemon. Have guests spoon the sauce of their choice over their oyster, and eat whole.
