Sunshine Berry Summer Smoothie
I’m not sure if there’s anything more refreshing on a hot day –like the one I’ve been dealing with today or the ones the weather is insisting are coming en masse in the next weeks– than a frozen smoothie. This one –one of those smoothie shakes that’s almost as good as a real milkshake– is as simple and delicious as you can get. I like to toss in a little sugar if my blackberries are particularly tart.
Serves 4 people.
Ingredients:
6 oz. lemon or vanilla yogurt
1 can (20 oz.) pineapple chunks (not in syrup), drained
16 oz. frozen blackberries (or raspberries or mixed berries)
1 C. ice cubes (optional)
Instructions: In a large blender, combine the yogurt, pineapple, and blackberries. Blend until semi smooth. Add the ice cubes one at a time and blend until smooth and icy. Drink through a wide straw!
