Easy, Flaky, Buttery: The World’s Best Buttermilk Biscuits

If your idea of an ideal buttermilk biscuit is one that’s full of butter flavor and is high, fluffy, and ultra flaky –so much so that it almost melts in your mouth– then this is the homemade buttermilk biscuits recipe for you. Seriously

I’m not sure what makes this recipe quite so special. I love that it doesn’t take a lot of kneading or even require a rolling pin. But even if it did need all those things, a flaky buttermilk biscuit recipe like this would be worth it. They’re perfection. Maybe it’s the addition of club soda that makes them that way, but I dunno. Don’t look a gift horse in the mouth, and all that.

Recipe makes about 18 full-sized biscuits. For snacks or appetizers, I like to use appetizer-sized cutters (about 1 1/2″ across) and make about 60 mini bisuits. Leave as snacks or fill as desied for a fun appetizer.

Ingredients:

1/2 C. butter, softened
1 lg. egg, beaten
3/4 C. buttermilk
1/4 C. club soda
1/2 to 1 tsp. salt (or to taste)
4 to 4 1/2 C. Bisquick or other biscuit baking mix
Melted butter (optional)

Instructions: Preheat your oven to 425 degrees F. Grease a large flat baking sheet.

In a large bowl, combine the butter, egg, buttermilk, club soda, and salt. Stir in about 4 C. of bisquick with a wooden spoon (or use your hands to mix). Add another half-cup or so of Bisquick if your dough’s not quite stiff enough

Knead your dough until it holds together well, but don’t knead too much. It only needs a bit.

Flour a board, dump your dough out on it, and press the dough into a square about 3/4″ thick.

Cut biscuits with a biscuit cutter (I generally use a clean, floured water glass).

Place on your prepared baking sheet and bake 13-15 minutes, or until golden.

To get the bright yellow biscuit color like in the photo, brush with melted butter right when the come out of the oven.
